Cinnamon Spiced Chocolate Chunk Popcorn

I made this popcorn a few weeks ago to send to a retailer, to whom I am interested in supplying Zimt, as well as quite a few samples of Zimt treats themselves. His assistant told me that he loves popcorn and loves chocolate- so, why not make him a custom treat combining two of, what are coincidentally, my favourite foods as well? (On the list with cereal, banana soft serve, cinnamon buns, anything with carbs, speaking of which- muffins,flat bread, fruit, hummus, anything Mediterranean/Middle Eastern and vegan, grilled chz, mac n chz, anything with chz… um…).
This Cinnamon Spiced Chocolate Chunk Popcorn was inspired by the lovely twosome that is chocolate and popcorn - it is so tasty.
Cinnamon Spiced Chocolate Popcorn
12g coconut oil (unrefined, I used Naked Coconuts brand- it is also what is in the Double Chocolate Macaroons =) ).
¼ t Himalayan (or other good quality) salt
½ cup unpopped organic popcorn
1.5 T coconut sugar
½ t ground cinnamon
1/3 cup chopped Zimt (I would say either Chocolate 70%, Sugar & Spice, or perhaps even Chocolate Coconut Crisp or Salt of the Earth but make sure that you reduce the salt to maybe 1/8 t in this case unless you love salty salty salty popcorn)
In a large pot, with a lid, heat up the coconut oil on high until it is fully melted. Then, sprinkle in the salt. Then, you add in the unpopped organic popcorn, shaking the pan a little bit to make sure that the unpopped organic popcorn is dispersed on the bottom. While it is heating up, be sure to shake the pot close to the element to heat all of the bottom evenly. Do this every 5 seconds or so, I would say. The popcorn kernels will begin to pop! They will go a little crazy for a while.
Once you have about 3 quarts of popped popcorn, add the coconut sugar, stirring through. You can also shake the pot with the lid on it to disperse the coconut sugar, though I think stirring it is best. Then, you add your chopped Zimt*.
Then, you sprinkle it with ground cinnamon, and stir it through. And then you stir in your chopped Zimt! Stir it well- it will melt a bit and get all over the popcorn and it will be such a tasty chocolate party =)

I am not sure what the retailer thought- I have yet to hear back and yet to get anything but voicemail when I do follow up calls! But really, who cares about the express postage I spent to get this stuff to him fresh? This tasty recipe is a gift that will last a lifetime.
Perhaps make it for a Christmas party? Today is, after all, Saturday- a perfect day for popcorn. And for heading to check on things in the kitchen…!

*If you are using your own home-made chocolate, be sure that it is made with cocoa butter not coconut oil, or it will melt all over the place. May still be tasty, I don’t know.
