Chocolate Chip Banana Bread- oil free, vegan, and breakfast approved!
If you’re in Vancouver right now, you know today is a perfect one for three things, in combination:
1. a good book
2. a hot cup of tea or coffee
3. this banana bread (you will know after you try it
)
A few weeks ago, I drove past a grocery store where bananas were on sale for a ridiculously low price. Organic, fair trade bananas- for $0.19/lb?! Yes please. It was time to stock up.
And make banana bread- I love the stuff but haven’t made it in years. And I generally don’t buy baked goods, because they aren’t produce or foods from the bulk section of grocery stores. So after freezing lots of these very ripe bananas and needing to start cleaning out the freezer for moving day, it was time to get down to business- banana bread business.
Here’s an oil free, vegan, breakfast-approved banana bread recipe that will not disappoint. Just be sure to add enough chocolate. And maybe toast it and spread some coconut oil on top. Yum.
Chocolate Chip Banana Bread based on this

- 240 g flour (2 C)
- 1 tsp baking soda
- œ tsp cinnamon
- 3/4 tsp baking powder
- 3/4 tsp salt
- 240 g banana mashed
- 80 g almond milk (? cup)
- œ tsp vanilla bean
- 23 g lemon juice or ACV (1.5 TB)
- 120 g maple syrup (œ cup)
- 80 g Zimt (probably the baking chocolate unless you want to take out a second mortgage)
Preheat oven to 355 C.
Put flour (I used a mix of spelt and gf all purpose- because there were bits left of both), baking soda, baking powder, cinnamon, and salt into a bowl and stir them together. And then put your baking chocolate in and stir, too.
I used a Vitamix to blend together the banana, almond milk, vanilla, lemon juice, and maple syrup together, but you could probably use a bowl and a fork. So once you have that mixed, you add your banana mixture to your flour and chocolate mixture and you stir until just combined.
Pop into a loaf pan and bake for 1 hour. This gives it a super crust- just crunchy enough and the rest of the banana bread is still moist. Yum!
